MACADAMIA NUT LEMON GARLIC BUTTER HALIBUT

  • 2 Halibut fillets
  • 2 T butter from pasture raised cows, softened
  • 1 T minced garlic
  • Juice from 1/2 lemon
  • Zest from that 1/2 lemon (about 1/4 t)
  • 1t dried basil
  • 1 T dried parsley
  • 1/2 t dried oregano
  • 1/2 t rosemary
  • ( I used 1 T Sprouts Herb Crusted dry rub instead)
  • 1/3 C crushed macadamia nuts

Method

    Preheat oven to 400 degrees
    Place the fish in a baking dish
    Mix the butter, juice, zest and spices and spread over the fish
    Add the nuts, pressing into the butter
    Bake the fish for about 10 minutes, then broil for 2-3 minutes. This timing is crucial based on the thickness of the fish. My fillets were about 3/4 inches thick. It’s best to start out under baking-you can always put it back for a couple minutes. The fish should be slightly translucent in the middle.
